Ingredients for 4 servings:

  • 800 g zucchini, peeled if desired
  • 2 large onions
  • 2 cloves garlic
  • olive oil
  • salt and pepper
  • 500 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

a simple recipe from Spain

Finely chop the zucchini, onions, and garlic and sauté them in plenty of olive oil in a large pot. Add 500 ml of water and simmer for 10 minutes, until the vegetables are soft. Then remove the pot from the heat and puree the soup. Finally, season with salt and pepper. Serve with croutons or fresh farmhouse bread.
