Soy lasagna

Ingredients for 4 servings:

  • 60 g soy granules
  • 1 tsp broth, powder
  • 150 ml boiling water
  • 1 can of tomatoes, peeled
  • 3 tbsp tomato paste
  • 1 pinch(s) of sugar
  • 1 clove(s) garlic
  • 750 ml milk
  • 60 g butter
  • 60 g flour
  • 1 tbsp broth powder
  • 2 pinches of nutmeg
  • salt and pepper
  • pepper
  • herbs, Italian
  • chili flakes
  • e.g. lasagna sheet(s)
  • 150 g cheese, grated (Gouda mixed with Parmesan)

Meatless lasagna with soy bolognese

Mix the soy granules with the stock powder and pour over the boiling water. Add a large can of tomatoes and the tomato paste, and season with a pinch of sugar. Season to taste with salt, pepper, herbs, and chili flakes. Let the mixture swell for about 10 minutes. For the béchamel sauce, heat the butter, stir in the flour, and sauté until lightly browned. Finely mince the garlic clove, add it along with the milk and stock, stirring constantly. Bring to a boil, and simmer for about 5-7 minutes, stirring continuously. Season with nutmeg and pepper. Spread some of the béchamel sauce into a greased baking dish, add the lasagna sheets, then the soy Bolognese, followed by the béchamel sauce. Continue in this manner, finishing with the pasta sheets and béchamel sauce. Spread the cheese on top. Bake at 175°C for about 20-30 minutes.
