Greek rice noodles with zucchini and feta cheese

Ingredients for 6 servings:

  • 2 m.-large zucchini
  • 500 g rice noodles
  • 1 clove(s) garlic
  • 1 pinch(s) thyme, shredded or fresh
  • 100 ml olive oil
  • 2 packs of shepherd’s cheese or sheep’s cheese, approx. 200 g each
  • 600 ml vegetable stock
  • 200 ml cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash and finely grate the zucchini. Place it in a baking dish along with the rice noodles. Finely chop the garlic and add it. Mix everything well with the thyme and olive oil. Place the two feta cheeses in the center and press down slightly. Pour in the vegetable stock. Cover the baking dish. Bake in a preheated oven at 170°C (340°F) for 25 minutes. Then add the cream and stir well. Serve with something pan-fried and a fresh salad.
