Ingredients for 4 servings:
- 250 g finely chopped soybeans (Alnatura)
- 500 g pasta (wholemeal pasta)
- 2 onions
- 3 stalk(s) spring onions
- 7 tbsp tomatoes, pureed
- 250 ml sour cream
- 600 ml vegetable stock
- Mustard
- Paprika powder
- salt and pepper
- possibly chili powder
- Sambal Oelek
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the soy strips in the vegetable stock for a good 10 minutes, then simmer on very low heat for about 20 minutes, or let them simmer. This can be done a little less or longer. In the meantime, finely dice the onions and slice the spring onions. Drain the soy strips, but reserve the remaining water. Sauté the onions in a pan, add the soy strips and fry for a bit. Then add the spring onions, the passata, about 100-200 ml of vegetable stock, and the other seasonings. Simmer for about 5-10 minutes. You can add chili powder or sambal oelek to taste. Add the sour cream at the very end. In the meantime, cook the noodles until soft and serve with the strips.
