Spelt pasta with green pesto and roasted pine nuts

Ingredients for 1 servings:

  • 50 g wholemeal pasta (spelt pasta)
  • 3 tbsp, heaped pine nuts
  • 1 tbsp olive oil
  • 1 tsp pesto, green (e.g. San Fabio or Kattus)
  • 8 small tomatoes

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Vegetarian, Candida-friendly, for singles

Cook the spelt pasta in salted water until al dente. Meanwhile, wash and halve the tomatoes and toast the pine nuts in a pan with a tablespoon of olive oil. Drain the pasta and add it to the pine nuts, then add the tomatoes and a teaspoon of pesto. Mix everything together and cook for about 5 minutes over medium heat. This delicious, light dish is then ready to enjoy.
