Ingredients for 4 servings:
- 300 g soybeans, dried
- 1 onion(s)
- 2 cloves garlic
- 1 bunch of soup vegetables
- 2 bell peppers, different colours
- 3 tbsp olive oil or margarine
- 3 tbsp tomato paste
- e.g. salt and pepper
- Paprika powder, sweet
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 13 hours 45 minutes

Soak the beans overnight. Rinse and drain the next day. Wash the vegetables and shake dry. Chop them finely. Peel the onion and dice them into small pieces. Do the same with the garlic, but a little finer! Sauté the onions, adding the garlic a little later so it doesn’t burn and become bitter. Add the beans and cover with water until the beans are covered. Add the vegetables and bay leaf. Simmer for about 60 minutes. Meanwhile, chop the bell peppers and cover. After about 60 minutes of cooking time, add the soup to the pot with the tomato paste and spices. Bring everything back to a boil and simmer for another 5-10 minutes. Remove the bay leaf and season to taste. Fresh baguette or flatbread goes well with this. If you like, you can also add potatoes, or cooked ones from the day before (then mash them if necessary).
