Spaghetti Bolognese with fresh tomatoes

Ingredients for 4 servings:

  • 500 g minced beef
  • 3 large onions
  • 150 g ham or ham:bacon 1:1
  • 4 carrots, diced, striped or cut into large pieces, depending on your preference
  • 5 tomatoes, more to taste
  • 4 garlic cloves or to taste
  • e.g. fresh basil,
  • 1 dash of olive oil
  • salt and pepper
  • 1 large tomato(s) or 2, diced
  • 250g spaghetti

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

First, fry the onions in a little olive oil until lightly browned to infuse the roasted onion flavor into the Bolognese. Then simply add the minced meat and fry. Once the minced meat is nicely browned, add the desired amount of ham (I personally use half ham and half bacon) and the raw carrots to the pan. If you prefer the carrots to be firm, cook them briefly first. Meanwhile, put the tomatoes, garlic (whole cloves are fine), and basil in a blender. Blend everything on the lowest speed with a dash of olive oil and season with salt and pepper. Then add the sauce to the pan. Depending on the desired sauce:meat ratio, blend in a few more tomatoes. Then dice 1-2 large tomatoes and add them to the sauce in chunks. Feel free to add a few leaves of fresh basil and season again with salt and pepper. Cook the spaghetti as usual. When the spaghetti is cooked, remove the sauce from the heat.
