Ingredients for 1 servings:

  • 260 g spelt flour
  • 100 g whole cane sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 75 g butter
  • 2 eggs
  • 280 g yogurt
  • 2 tsp vanilla flavor

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Grease a 12-hole muffin tin with oil or butter, or line with paper baking cups. Preheat the oven to 180°C (top/bottom heat). Combine the flour, sugar, baking powder, baking soda, and salt in a bowl and whisk to combine. Add the butter in small pieces. Mix by hand until smooth. Do not knead. In a second bowl, combine the eggs, yogurt, and vanilla extract and whisk to combine. Now pour the contents of the second bowl into the bowl with the flour mixture. Stir gently with a spatula until almost no flour is visible. Then pour the batter into the muffin tins and bake for about 25-30 minutes. Tip: Add chocolate chips, jam, or fruit to the batter, if desired.
