Spaghetti salad with mustard balsamic dressing

Ingredients for 2 servings:

  • 250 g spaghetti or pasta of your choice
  • 3 tomatoes
  • 1 bell pepper(s), orange or yellow
  • 1 mozzarella or feta
  • 1 small onion(s), red
  • n. B. olives
  • 6 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 3 tsp mustard, to taste
  • 2 tsp honey
  • 40 g basil, chopped, frozen or fresh
  • pepper
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Prepare the pasta according to the package instructions. Roughly dice the tomatoes, bell peppers, and mozzarella, finely chop the onion, and halve the olives. For the dressing, whisk together the balsamic vinegar, olive oil, mustard, and honey, then add the basil and season with salt and pepper. Place the vegetables, mozzarella, and sauce in a bowl and mix well. Gradually add the slightly cooled pasta and mix in. This makes it easier to evenly distribute the dressing, especially with larger quantities. A great alternative to pasta salad with mayonnaise, whether as a side dish or as a main course.
