Ingredients for 4 servings:
- 400 g spaghetti, cooked, from the previous day
- 300 g feta cheese
- 5 eggs
- 100 g cheese, grated
- 2 Pepper , in 2 colors, e.g. red and yellow
- 3 tomatoes, or 6 large cherry tomatoes
- Olive oil, for frying
- Pepper, or Thai chili pepper

ideal for using up leftover spaghetti
Cut the spaghetti into small pieces using kitchen scissors. Dice the tomatoes and peppers and mix with the spaghetti. Dice or crumble the feta cheese and place it in a tall container. Add the eggs and grated cheese, season with pepper, and mix with a hand blender. Heat the olive oil in a small frying pan (for fried eggs) and add the spaghetti and vegetable mixture in portions. Spoon on about 3-4 tablespoons of the cheese and egg mixture, mix well, and press down. Cook covered at medium heat for about 5-10 minutes, until most of the meat has set, then turn over and cook the other side for another 3 minutes. Serve with skewers, a fine mixed salad, or nothing at all.
