Fried Maultaschen with tomatoes and egg

Ingredients for 3 servings:

  • 2 packs of Swabian Maultaschen or 12 Maultaschen from the previous day
  • e.g. cherry tomatoes
  • 3 eggs
  • Oil or butter for frying
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat oil/fat in a pan for frying. Meanwhile, cut the Maultaschen into bite-sized strips. Add the strips to the pan as soon as the oil/fat is hot. Turn them over occasionally to ensure they are cooked well on all sides. Season with salt and pepper (or other spices of your choice). Halve the tomatoes and add them to the Maultaschen when they are almost done. Fry briefly, turning occasionally. Then add the eggs to the pan and let them set briefly, then stir gently until the eggs are completely set.
