Spaghetti with a sweet and spicy parsley pesto with nuts

Ingredients for 4 servings:

  • 500g spaghetti
  • 2 bunches of flat-leaf parsley
  • 1 tsp honey
  • 1 small chili pepper(s)
  • 50 g walnuts or cashews
  • 50 g Parmesan, freshly grated
  • salt and pepper
  • 50 ml olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Pick the parsley leaves, wash, and dry them. Blend them with the remaining ingredients, adding olive oil to the desired consistency. Cook the pasta according to the package instructions until al dente, then drain, but do not drain completely. Leave a little of the pasta water in the pot with the spaghetti and stir in the pesto. Arrange on plates and serve.
