Divine Parmesan foam – Schiuma di Parmigiano

Ingredients for 2 servings:

  • 150 g Parmesan
  • 2 onions
  • 2 garlic cloves
  • 1 cup of sweet cream, approx. 200 ml
  • 1 shot of white wine
  • Olive oil for frying
  • e.g. salt and pepper
  • n. B. sugar
  • 250 g spaghetti or other pasta of your choice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with spaghetti – sinful and super easy

Peel and finely chop the onion and garlic. Sauté them in hot olive oil. Thinly slice the Parmesan and add it along with the cream. Reduce the heat and simmer until the Parmesan melts. Meanwhile, cook the pasta according to the package instructions. Deglaze the pan with white wine and return it to the heat. Season with salt, pepper, and a pinch of sugar. Blend everything with an immersion blender until fluffy and serve quickly with the pasta. Tip: Fresh parsley, roasted pumpkin seeds, or truffle butter are great toppings. A dry white wine goes perfectly with this.
