Spaghetti with bacon

Ingredients for 4 servings:

  • 320 g spaghetti or other pasta
  • 1 onion(s)
  • 4 tbsp extra virgin olive oil, cold squeezed
  • 150 g smoked pork belly or bacon
  • 1 peperoncini or chili pepper
  • ½ can tomatoes, chopped
  • 100 ml whipped cream
  • 2 sprigs of parsley
  • Salt
  • Parmesan, freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Cook 320g of spaghetti in plenty of salted water until al dente. Finely chop 1 onion and sauté in 4 tablespoons of olive oil in a pan. Cut the bacon into thin strips. Deseed and finely chop the pepperoncini or chili pepper. Add the bacon and pepperoncini to the onions and continue to simmer until the bacon begins to brown. Add the tomatoes and continue to simmer, covered. Finely chop 2 sprigs of parsley. Once the spaghetti is cooked, drain it and toss it with the sauce along with 0.1l of heavy cream and the parsley. Season with salt. Serve with freshly grated Parmesan cheese.
