Spaghetti with broccoli sauce a la ma-ja

Ingredients for 4 servings:

  • 500g spaghetti
  • 500 g broccoli (fresh or frozen)
  • ¼ liter vegetable broth
  • 2 tbsp margarine
  • 2 tbsp flour
  • 200 g herb cream cheese
  • some pepper
  • some salt
  • possibly cheese, grated

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the broccoli florets in 1/4 liter of boiling vegetable broth for 5-7 minutes. Don’t discard the broth; you’ll need it later! Cook the spaghetti according to the package instructions until al dente. Meanwhile, heat the margarine in a saucepan, stir in the flour, and deglaze with the broth. Simmer for about 5 minutes, then add the herb cream cheese and season with salt and pepper. Finally, add the broccoli to the sauce and whisk to break up the florets until no chunks remain. Mix the spaghetti with the sauce and serve immediately. Sprinkle with grated cheese, if desired.
