Spaghetti with Galia melon

Ingredients for 4 servings:

  • 500g spaghetti
  • ½ Galia melon, diced
  • 200 ml cream
  • 250 g bacon, diced
  • 1 onion(s), diced
  • 1 garlic clove(s), finely chopped
  • 3 tbsp tomato paste
  • salt and pepper
  • Italian herbs (basil, oregano …)
  • chili
  • 1 shot of white wine
  • 100 ml broth

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Spaghetti in tomato cream sauce with bacon and melon

Remove the seeds from half the melon, scoop out the flesh from the rind, and cut into cubes (not too small, a good bite-sized). Finely dice the onion. Finely chop the garlic clove. Sauté the onion in olive oil until translucent, then add the bacon and, a little later, the garlic. Sauté until the bacon is rendered and the onions and garlic are golden brown. Deglaze with the white wine and stock and reduce the heat. Meanwhile, cook the spaghetti in salted water according to the package instructions. Add the tomato paste and cream to the fried onion, garlic, and bacon mixture and stir until well combined. Now add the melon cubes to the sauce and stir. Season to taste with salt, pepper, chili, and Italian herbs, if desired. Transfer the cooked spaghetti to the plates and spoon the sauce over the spaghetti. If you like, you can also top with grated Parmesan cheese.
