Spaghetti with herb and tomato sauce

Ingredients for 4 servings:

  • 3 slices of toast
  • 60 g butter
  • 400g spaghetti
  • salt and pepper
  • 2 cloves garlic
  • 3 tomatoes
  • 50 g Parmesan
  • 1 bunch of basil
  • 3 tbsp olive oil
  • 100 ml white wine, dry

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Crumble the toast. Melt the butter in a pan. Toast the toast until golden brown. Drain on kitchen paper. Cook the pasta in boiling salted water according to the package instructions. Thinly slice the garlic. Quarter the tomatoes, remove the seeds, and finely dice them. Grate the Parmesan cheese. Finely chop the basil. Heat the oil in a large pan. Sauté the garlic until translucent. Add the tomatoes and sauté briefly. Deglaze with white wine. Add the pasta, half of the toast crumbs, and the basil, and toss everything together. Season with salt and pepper. Serve on plates and garnish with the remaining basil. Sprinkle with shaved Parmesan cheese, the remaining toast crumbs, and cracked pepper and serve immediately.
