Spaghetti with mixed mushrooms

Ingredients for 2 servings:

  • 250 g spaghetti or linguine
  • 1 jar mushrooms, mixed, antipasti
  • 2 spring onions
  • 1 garlic clove(s)
  • 1 tbsp butter
  • 50 ml white wine
  • 100 ml vegetable stock
  • 125 g mascarpone
  • Salt and pepper, from the mill
  • Parsley, for garnishing

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the pasta according to the package instructions. At the same time, place the mushrooms in a colander and drain. Slice the spring onion into rings and chop the garlic. Sauté the garlic, mushrooms, and spring onion in heated butter. Pour in the white wine and broth, add the mascarpone, bring to a boil, and simmer for 3 minutes. Season the mushroom sauce with salt and pepper. Divide the pasta among warmed plates, spoon the mushroom sauce on top, garnish with parsley, and serve immediately.
