Ingredients for 3 servings:
- 25 g truffles (summer truffles)
- 600 g pasta, fresh, preferably with egg
- 150 g young Parmesan cheese
- Salt and pepper, white
- 100 g butter
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Heat the butter in a saucepan. Thinly slice the truffles into the butter using a truffle slicer. Cook the pasta according to the instructions, drain (reserve some of the cooking water), add it to the truffle butter, and mix well. Fold in the grated Parmesan cheese. Season with salt and white pepper. If it’s too thick, stir in a little of the cooking water.
