Spaghetti with pimientos and tomatoes

Ingredients for 2 servings:

  • 200g spaghetti
  • 150 g fresh green peppers (Pimientos)
  • 2 tomatoes
  • 30 g Parmesan, coarsely grated
  • 1 tbsp oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Cook the spaghetti. Meanwhile, wash and dry the pimientos, then slice the whole peppers, including the seeds (without the stems!), into thin rings. Heat the oil in a small pan and sauté the pimientos for 4 minutes, stirring occasionally. Then add the diced tomatoes and season with salt and pepper. Simmer for another 2 minutes on low heat. Drain the spaghetti, add the pimientos and tomato mixture, and sprinkle with Parmesan cheese.
