Spaghetti with salmon and zucchini

Ingredients for 1 servings:

  • 50g spaghetti
  • salt water
  • 50 g smoked salmon
  • 1 small onion(s)
  • 1 large zucchini
  • 1 tsp rapeseed oil
  • 100 ml vegetable stock
  • 3 tbsp cream cheese
  • 1 tbsp lemon juice
  • dill
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the spaghetti in salted water according to the package instructions. Meanwhile, cut the salmon into strips, finely chop the onion, and dice the zucchini. Heat the oil in a pan and sauté the onion until translucent. Add the zucchini and sauté. Pour in the vegetable stock and simmer for 5 minutes. Finally, stir in the cream cheese and season with lemon juice, dill, salt, and pepper. Toss the spaghetti with the sauce and garnish with the salmon strips.
