Spaghetti with spinach and feta cheese

Ingredients for 4 servings:

  • 2 tbsp oil (olive oil)
  • 1 onion(s), chopped
  • 300 g spinach, chopped
  • 250 ml vegetable stock
  • 500 g pasta (spaghetti)
  • salt and pepper, pepper
  • nutmeg
  • 1 tsp oregano
  • 200 g sheep’s cheese
  • 2 tbsp pine nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat olive oil in a saucepan, sauté onions, add spinach, pour in broth, and simmer for 10 minutes, stirring occasionally. Cook spaghetti in salted water for 8-10 minutes until “al dente,” then drain. Season spinach with salt, pepper, nutmeg, and oregano. Crumble feta cheese and mix with the spinach, simmering for about 5 minutes. Add lightly toasted pine nuts and season to taste. Pour the sauce over the spaghetti.
