Spaghetti with tomatoes, mint and capers

Ingredients for 2 servings:

  • 500 g tomatoes
  • ½ bunch fresh mint, chopped
  • ½ bunch parsley, flat, chopped
  • 1 tbsp capers
  • 4 tbsp olive oil
  • 5 garlic cloves
  • 300g spaghetti
  • some salt and pepper
  • Sugar
  • 1 tbsp, leveled chili flakes
  • 80 g Parmesan, grated

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Prepare the spaghetti according to the package instructions. Halve the tomatoes and squeeze the juice and seeds with your fingers. Then chop them into small pieces, removing any remaining green blossoms. Roughly crush the garlic cloves and fry them in olive oil in a sufficiently large pot. Then remove them from the pot. Add the tomatoes to the pot, add the chili flakes and capers, and stir well. Then add the mint and parsley and season the sauce with salt, pepper, and sugar. Add the cooked spaghetti to the pot, toss well with the sauce, and serve. Sprinkle with grated Parmesan cheese and enjoy.
