Ingredients for 4 servings:

  • 500g spaghetti
  • 500 g yogurt
  • 1 cucumber(s)
  • chives
  • Parsley
  • Salt and pepper, white
  • 1 piece(s) butter (a small piece)

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the spaghetti according to the package instructions until al dente. While the spaghetti is cooking, peel the cucumber, quarter it, and cut it into bite-sized pieces. Trim and chop the herbs, if desired, and add them to the cucumbers along with the yogurt, mixing well. Season with salt and pepper. Drain the pasta after cooking and stir in a small knob of butter. Divide the pasta among plates and serve. Only pour the cool yogurt over the hot pasta at the table. The contrast between the hot pasta and the cold cucumber in the yogurt is the highlight. A quick, easy dish for hot days.
