Ingredients for 1 servings:
- 800 g spinach, frozen
- 300 g pastry sheets (filo) or puff pastry
- 3 spring onions
- 300 g feta cheese, crumbled
- 4 tbsp dill, chopped
- 4 tbsp parsley, chopped
- possibly caraway
- salt and pepper
- oregano
- 1 egg yolk
- some sesame, white
- butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Greek spinach pita
Cook the spinach and drain. Fry the onions in oil and add them to the spinach in a bowl. Crumble the feta cheese with a fork and add it to the spinach and onions. Finely chop the parsley and dill and mix with the spinach. Season with salt and pepper. Brush the baking dish with butter. Line the baking base with filo or puff pastry sheets. Spread the spinach mixture over the pastry sheets and cover with the remaining filo/puff pastry. Brush the top layer of pastry with egg yolk and sprinkle with a little sesame seeds. Tip for using filo pastry: Line the baking dish with 3 layers of pastry, brushing each layer with melted butter and pressing the layers together; otherwise the pastry will be too thin! Bake in a preheated oven at 200°C for approx. 30-45 minutes.
