Ingredients for 1 servings:

  • 250 g margarine
  • 100 g sugar
  • 150 g flour
  • 4 egg yolks
  • 2 tsp baking powder
  • 4 tbsp milk
  • Fat, for the shape
  • 4 egg whites
  • 200 g sugar
  • 1 egg(s)
  • 1 tsp cornstarch
  • 125 ml water
  • 100 g sugar
  • 2 tsp butter
  • 2 lemons
  • 2 cups whipped cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Beat the margarine and sugar until fluffy. Stir in the egg yolks. Mix the flour and baking powder and add them. Beat until smooth with the milk and spread evenly into two greased springform pans. Beat the egg whites until stiff peaks form and then add the sugar. Spread the meringue mixture evenly over both layers. Bake at 200°C for approx. 20 minutes. Remove the layers from the pans and let cool. Heat the water with the egg, sugar, butter and lemon juice, thicken with the mixed cornstarch and let cool. Whip the cream until stiff peaks form, fold into the cooled lemon mixture and spread over one of the layers. Place the other layer on top with the meringue facing up and chill until ready to serve.
