Ingredients for 4 servings:

  • 250 g tomatoes
  • 250 g leek, young
  • 500 g zucchini
  • 1 garlic clove(s)
  • 2 sausages (garlic sausages) approx. 150g
  • 4 tbsp oil
  • 300 g peas, frozen
  • 4 eggs
  • some salt
  • some pepper, coarsely ground

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Blanch the tomatoes and peel them. Trim and wash the leeks and slice them into thin rings. Wash and slice the zucchini. Crush the garlic cloves. Slice the garlic sausages. Heat the oil in a large pan. Add the garlic, leeks, zucchini, peas and sausage. Cover the pan and simmer everything over medium heat for about 6 minutes. Then spread the vegetables out in the center of the pan and crack the eggs into them. Quarter or eighth the tomatoes, depending on their size, and place them on top of the vegetables. Sprinkle everything with salt and coarse pepper. Fry everything in the uncovered pan until the egg whites have set.
