Spanish potato omelet with paprika sausage

Ingredients for 4 servings:

  • 6 large potatoes
  • 5 eggs
  • 1 small paprika sausage (chorizo)
  • some salt
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Tortilla de patata con chorizo

Peel and wash the potatoes, and cut them into small cubes or slices. Season with salt. Fry in plenty of hot oil over low heat for 15-20 minutes, turning occasionally. Beat the eggs. Cut the sausage into small pieces and add them to the beaten eggs. When the potatoes are golden brown, remove them, drain well, and set aside. Let cool briefly. Mix the potatoes with the eggs and sausage. Pour the mixture into a pan with a little oil and fry over medium heat. Using a plate, flip the tortilla and brown the other side. Serve warm or cold. You can also make the tortilla with just the potatoes and eggs without the sausage, or vary it with other ingredients such as onions, tuna, shrimp, bacon, mushrooms, etc.
