Spanish-style chicken

Ingredients for 4 servings:

  • 1 ½ kg chicken
  • Salt
  • pepper
  • olive oil
  • 1 onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp flour
  • 4 tbsp parsley
  • 2 tbsp ginger root
  • 1 tsp saffron
  • 1 tbsp, sautéed cumin
  • 4 tbsp sesame seeds
  • 2 chili peppers
  • 200 ml chicken broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Cut the chicken into pieces (or use chicken breast or thighs). Rub in the salt and pepper. Heat the oil in a pan and sear the chicken pieces until translucent. Add the onions and garlic and continue frying until the onions are translucent. Add the flour, half of the parsley, ginger, saffron, cumin, sesame seeds, and the deseeded chili pepper. Pour the broth over everything, cover, and cook over medium heat for about 45 minutes, until the chicken is cooked through.
