Spare Ribs with Cucumber Salad and Yellow Onion and Potato Mash

The perfect spare ribs with cucumber salad and yellow onion and potato mash recipe with a picture and simple step-by-step instructions.

Spare ribs:

  • 1 Savory ribs marinated approx. 600 g
  • 2 tbsp Sunflower oil
  • 1 arc Backpaypier

Cucumber salad:

  • 1 Cucumber approx. 400 g
  • 1 piece Ginger the size of a walnut
  • 1 Chilli pepper
  • 2 tbsp Light rice vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Olive oil
  • 1 tbsp Roasted sesame seeds
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill

Yellow onion and potato mash:

  • 100 g Onions
  • 400 g Potatoes
  • 1 tsp Salt
  • 1 tsp Turmeric
  • 1 tbsp Cooking cream
  • 2 big pinches Coarse sea salt from the mill
  • 1 big pinch Nutmeg

Spare ribs

  1. Place the spare ribs on a baking sheet lined with baking paper, brush with sunflower oil (2 tbsp) and bake in a preheated oven at 200 ° C for about 40 – 45 minutes. Take out and cut into pieces.

Cucumber salad:

  1. Peel the cucumber with the garnish peeler and cut into fine slices. Peel and finely dice the ginger. Clean, wash and finely dice the chilli pepper. Roast the sesame (1 tbsp) in a pan without oil and remove a vinaigrette made of light rice vinegar (2 tbsp), olive oil (1 tbsp), brown sugar (1 tbsp), diced ginger, chili peppers, roasted sesame (1 tbsp), coarse sea salt Mix from the mill (3 big pinches) and colored pepper from the mill (3 big pinches), pour over the cucumber slices, mix well and let steep for a while.

Yellow onion and potato mash:

  1. Peel and dice the onions. Peel, wash and dice the potatoes. Boil the onion cubes with the potato cubes in salted water (1 teaspoon salt) with turmeric (1 teaspoon turmeric) for about 20 minutes, drain, add the cooking cream (1 tbsp), coarse sea salt from the mill (2 big pinches) and nutmeg (1 big pinch) and work through / pound well with the potato masher.
