Sparkling Strawberry

Ingredients for 8 servings:

  • 500 g strawberries
  • 500 ml water
  • 300 g sugar
  • 2 tbsp white wine vinegar
  • 180 ml tequila
  • 3 limes
  • n. B. mineral water
  • n. B. ice cubes
  • 250 g strawberries as filling

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

refreshing cocktail

Wash and roughly chop 500g of strawberries, then add them to a saucepan with 500ml of water and bring to a boil over medium heat. Reduce the heat and simmer for 8-10 minutes, until they are very fragrant and the strawberries are very soft. Then puree with a hand blender, add the sugar, and stir over medium heat until the sugar dissolves. Bring to a boil, reduce the heat, and simmer for a further 5 minutes. Remove from the heat, add the vinegar, let it cool slightly, stir in the tequila, and let it cool completely. This strawberry-tequila mixture will keep in a sterile container in the refrigerator for 1-2 months. For the cocktail, squeeze the juice from 2 limes. Wash the third lime with very hot water, dry thoroughly, and cut into small wedges. Wash and finely chop the 250g of strawberries. To serve, divide the strawberry pieces, lime juice, and lime wedges between the cocktail glasses and top up with strawberry tequila, a little mineral water (to taste), and ice cubes.
