Strawberry aperitif

Ingredients for 6 servings:

  • 300 g strawberries, ripe but firm
  • 3 tbsp sugar
  • 1 tsp lemon juice
  • 1 bottle of sparkling wine, dry, very cold,
  • 6 strawberries as decoration for the glasses

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Wash the strawberries, including the stems (so they don’t absorb water and lose their flavor). Remove the stems, chop the strawberries, and mix with sugar and lemon juice. Cover and refrigerate for at least 1 hour. Then puree the mixture and refrigerate until ready to serve. To serve, pour the strawberry puree into a carafe. Gradually pour in the sparkling wine. Stir gently to prevent the bubbles from dissipating. Serve in champagne flutes and decorate the rim of each glass with a sliced ​​strawberry.
