Vegetable pan with mozzarella

Ingredients for 2 servings:

  • 1 large sweet potato(s)
  • 2 carrots
  • 100 g mushrooms
  • 3 spring onions
  • 1 parsnip(s) and/or parsley root
  • 2 tomatoes
  • 1 ball of mozzarella
  • 2 tbsp crème fraîche
  • Salt
  • 1 tbsp ghee or olive oil
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Chop the vegetables. First, fry the sweet potato, parsnips, carrots, and spring onions in ghee. Add the mushrooms and tomatoes and fry. Once the vegetables are cooked through, toss with the crème fraîche. Then chop the mozzarella and fold in. Let it melt. Season with salt and pepper.
