Spätzle – pancakes

Ingredients for 4 servings:

  • 500 g spaetzle
  • 2 onions
  • 100 g flour
  • 100 g bacon (smoked belly)
  • 5 eggs
  • salt and pepper
  • nutmeg
  • chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Either make your own spaetzle or cook according to the package instructions and set aside. Dice the onions and smoked pork belly. Fry the onion cubes and let them cool. Mix the cold onion cubes with the eggs, flour, and some chives. Now fold the spaetzle into the mixture. The mixture should be a bit firmer. Season to taste and finally fold in the bacon cubes. Using a tablespoon, form into puffs (cookies) and fry them one at a time in a pan with oil over low heat. This goes very well with lamb’s lettuce, but any other leafy salad will do.
