Ingredients for 4 servings:

  • 4 onions
  • 4 carrots
  • 4 Pepper, green
  • 4 bell peppers, red
  • 250 g tartar
  • 200 g spaetzle
  • 800 ml vegetable stock
  • 800 g tomatoes, pureed
  • 1 tbsp oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cut the onions into eighths and the carrots into slices. Chop the chili peppers and bell peppers into pieces. Cook the spaetzle according to the package instructions. Heat the oil in a pan, add the onions and tartar sauce. Fry everything until crispy and brown, then season with salt and pepper. Add the chopped vegetables, vegetable stock, and passata. Bring to a boil and simmer, covered, for about 10 minutes. Add the spaetzle to the stew and season well again.
