Speculoos – Belgian-style cheesecake

Ingredients for 1 servings:

  • 100 g speculatius biscuits
  • 500 g quark (20%)
  • 3 large eggs, separated
  • 100 g sugar
  • 1 lemon(s), the juice
  • 1 tbsp cornstarch
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°C. Grease a springform pan (approx. 20 cm) thoroughly (use a silicone pan, as the cake will stick slightly to the edges). Crumble the speculoos biscuits well and pour them into the pan. Mix the quark with the sugar, cornstarch, egg yolk, and lemon juice. Beat the egg whites until stiff and gently fold in. Pour this mixture into the pan. Place in the oven and bake for about 25 to 30 minutes. Remove from the pan and let it cool slightly before removing the cake from the pan. This makes it easier to bake. Note: Speculoos biscuits are available year-round in Belgium, so they are not a strictly Christmas biscuit. Therefore, many things are made with ‘speculoos’ (NL) (e.g., ice cream, waffles, tiramisu, etc.).
