Ingredients for 1 servings:

  • 400 g flour
  • 50 g ground almonds
  • 250 g butter
  • 150 g sugar
  • 1 m.-sized egg(s)
  • 1 tsp, heaped speculatius spice
  • 2 medium-sized egg yolks
  • 2 tbsp cream
  • 150 g granulated sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Knead the flour, almonds, butter, sugar, egg, and speculatius spice into a smooth dough and let it rest in the refrigerator for one hour. Then roll out on a floured surface to a thickness of 3 mm and cut out cookies. Place them on a baking sheet lined with baking paper. Mix the egg yolk and cream and brush over the cookies. Sprinkle with granulated sugar. Bake at 180°C for about 12 minutes until golden brown. Let cool on a wire rack.
