Ingredients for 1 servings:
- 200 g pitted soft dates
- 1 egg(s)
- 150 g butter
- 150 g almonds, ground
- 200 g flour
- 2 tsp speculatius spice
- 2 handfuls of almond flakes
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours
With the sweetness of fruits
Finely chop or puree the soft dates and egg in a high-powered food processor. Add the butter and mix until smooth. Stir in the spices and ground almonds. Add the flour and mix well. Chill the dough in a freezer bag for at least 1 hour. Then roll out the dough and cut out shapes. If you want almond flakes on the back, you can spread them on a baking sheet lined with baking paper, place the cookies on top, and press down lightly. Bake the cookies in an oven preheated to 170°C for 10 minutes on the middle rack, one sheet at a time. Traditionally, the cookies are thin (about 4 mm) and crispy. For a soft texture, you can also make the dough 7 mm thick and bake for just 10 minutes. You can find more sugar-free recipes on my profile.
