Spekulatius the way grandma used to make it

Ingredients for 4 servings:

  • 1 kg wheat flour type 405
  • 750 g sugar
  • 625 g butter, soft
  • 3 large eggs
  • 1 tsp, heaped cinnamon powder
  • 1 pinch of salt
  • ½ tsp clove powder
  • ½ tsp nutmeg, freshly grated
  • 1 tsp, stripped ammonium bicarbonate
  • 4 tbsp milk (3.5% fat)
  • 2 packets of vanilla sugar
  • 1 pack of speculatius spice

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Dissolve the baking powder in the milk. Make a dough from all ingredients, wrap in cling film, and refrigerate for 30 minutes. Then roll out the dough on a speculatius board and level it with a wire rack, or roll it out on a work surface and cut out shapes using speculatius cookies. Place the speculatius cookies on a greased baking sheet and bake in a preheated oven at 200°C (top/bottom heat) for about 10-15 minutes.
