Spelled Spaghetti with Herb Foam
The perfect spelled spaghetti with herb foam recipe with a picture and simple step-by-step instructions.
- 250 g Spelled spaghetti
- 200 ml Lactose-Free milk
- 200 ml Vegetable stock yeast-free or prepared yourself
- 1 bunch Chives
- 1 bunch Flat parsley
- 1 bunch Basil
- 1 branch Fresh thyme
- Salt and about 2 liters of boiling water
- Mix the milk and vegetable stock and bring to the boil and reduce for approx. 5 minutes
- Bring the salted water to the boil for the spaghetti
- Pluck the thyme leaves into the cream and let simmer
- Cut the chives into fine rolls, chop the remaining herbs if necessary or cut finely as well
- Add the spaghetti to the pasta water and cook al dente as instructed
- Add the herbs to the cream reduction and whip with the hand blender until foaming
- Drain the pasta and serve with the herb foam
