Spelled Spaghetti with Herb Foam

The perfect spelled spaghetti with herb foam recipe with a picture and simple step-by-step instructions.

  • 250 g Spelled spaghetti
  • 200 ml Lactose-Free milk
  • 200 ml Vegetable stock yeast-free or prepared yourself
  • 1 bunch Chives
  • 1 bunch Flat parsley
  • 1 bunch Basil
  • 1 branch Fresh thyme
  • Salt and about 2 liters of boiling water
  1. Mix the milk and vegetable stock and bring to the boil and reduce for approx. 5 minutes
  1. Bring the salted water to the boil for the spaghetti
  1. Pluck the thyme leaves into the cream and let simmer
  1. Cut the chives into fine rolls, chop the remaining herbs if necessary or cut finely as well
  1. Add the spaghetti to the pasta water and cook al dente as instructed
  1. Add the herbs to the cream reduction and whip with the hand blender until foaming
  1. Drain the pasta and serve with the herb foam
