Turkey Sausage Salad with Apple Cider Vinegar Vinaigrette

Ingredients
 

  • 300 g Turkey sausage - exclusively! of Turkey!!
  • Romaine lettuce leaves
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Rapeseed oil
  • 0,5 tsp Sugar
  • 1 pinch Salt
  • 1 Diced shallot
  • 1 Chives
  • 50 ml Water or vegetable broth
  • 1 Red pepper
  • 0,25 Cucumber
  • 1 Spring onion

Instructions
 

Prepare the vinaigrette

  • Mix the vinegar, sugar, salt and rapeseed oil thoroughly, then add the shallot cubes and the spring onion, cut into fine slices. Mix with water / vegetable stock. Season the whole thing and season it if necessary (has to be very strong so that the aromas can be transferred to the sausage and vegetables)

  • Cut the sausage into fine strips
  • Peel the cucumber, slowly slice it then into thin strips
  • Cut the bell pepper into thin strips
  • Cut the chives into thin rolls

the wedding"

  • Put the sausage and vegetables in the vinaigrette and let it steep for about 5-10 minutes

Serving

  • Arrange the lettuce leaves in a star shape on a plate and drizzle with a little vinaigrette. Then place the sausage salad on top and sprinkle with the chives
