Spelt and apple pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 60 g Flour (wholemeal spelled flour)
  • 150 ml milk, low-fat
  • 100 g apples
  • 1 pinch of cinnamon
  • 30 ml syrup (agave syrup) or sweetener
  • ½ tsp baking powder (cream of tartar)
  • Oil (rapeseed oil)
  • possibly quark
  • possibly maple syrup

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

wholesome and low in calories

Separate the eggs, whisk the egg yolks with milk, spelt flour, baking powder, agave syrup (or the appropriate amount of sweetener), and cinnamon. Beat the egg whites until stiff, fold into the batter, and finely slice or grate the apples. Add a little oil to the pan, place 4 small pancakes, and top with the apple slices. Flip, cook for another minute or two, and then serve on a plate, garnished with quark or maple syrup.
