Ingredients for 4 servings:

  • 200 g apples
  • 200 g carrot(s)
  • 15 g flour (wholemeal spelt flour) or spelt flakes
  • 1 egg(s)
  • 1 egg white
  • 50 g syrup (agave syrup) or sweetener

Cut 100g of the apples into small cubes, grate the remaining 100g and the carrots. Then add the egg and egg white, agave syrup, or the equivalent amount of sweetener for every 50g. Mix thoroughly, then stir in the spelt flour (if using agave syrup, you’ll need about 20g more flour) until the mixture is well combined. Now form 16 small pancakes (1 heaped tablespoon) from the dough and place them on a baking sheet (be sure to use baking paper). Bake at 150°C for about 15 minutes, until firm to the touch. You can also fry them in a pan with rapeseed oil. With sweetener and prepared in the oven, the entire recipe has about 320 kcal.
