Ingredients for 4 servings:
- 250 g spelt
- 1 head of broccoli
- 500 g vegetables of your choice (carrots, parsnips, mushrooms, kohlrabi)
- 1 piece(s) ginger, fresh
- salt and pepper
- Thyme
- Coconut oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cook the spelt according to the package instructions and let it swell slightly. Wash and peel the vegetables, and cut them into bite-sized pieces. I like to pre-cook the vegetables. Finely dice the ginger and sauté it in a pan or wok. Add the vegetables and spelt and sauté. Add the spices. Mix everything well. Tastes great with homemade herb curd.
