Spelt and mint cookies

Ingredients for 1 servings:

  • 250 g wholemeal spelt flour
  • 100 g butter
  • 50 g sugar or honey
  • 75 g nuts, ground
  • 1 egg(s)
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • 2 handfuls of fresh mint, chopped
  • 3 tbsp spice mix (Flower Power flower preparation)
  • 1 egg yolk for brushing

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Knead all ingredients into a shortcrust pastry dough – ideally by hand. Let it rest in the refrigerator for 1 hour. Then roll out to about 2 cm thick and cut out cookies. Place them on a baking sheet and brush with egg yolk. Bake at 180-200°C for 10 to 15 minutes (use your own oven’s experience).
