Spelt and walnut rolls without yeast

Ingredients for 1 servings:

  • 175 g Greek yogurt, 0.2% fat
  • 150 g wholemeal spelt flour
  • 2 pinches of sugar
  • 1 pinch of salt
  • 1 handful of walnuts
  • 20 g flaxseed
  • 2 tbsp milk, 3.5% fat
  • 1 egg(s)
  • ½ pack of baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

makes about 4 rolls

Lightly chop the walnuts and add them to a bowl with all the other ingredients. Mix everything together well until a slightly sticky dough forms. Using 2 tablespoons, portion the dough into 4 rolls on a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C (top/bottom heat) for about 20-25 minutes on the middle rack. The rolls will be nice and crispy on the outside and wonderfully fluffy on the inside. I like them best with mild Camembert.
