Spelt banana waffles

Ingredients for 4 servings:

  • 2 bananas
  • 4 m.-sized eggs
  • 125 g butter, soft, or margarine
  • 75 g raw cane sugar
  • 1 tsp, heaped vanilla sugar
  • 250 g spelt flour
  • 1 tsp, leveled baking powder
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 250 ml milk
  • some oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Separate the eggs and beat the egg whites until stiff, then set aside. Tip: The egg whites will stiffen faster if the bowl is cold. Whisk the egg yolks with the butter, sugar, vanilla sugar, and salt until fluffy. Mix the baking powder with the flour and then add it alternately with the milk to the egg yolk mixture and mix. Mash the bananas and add them to the batter with the cinnamon. Finally, slowly fold in the egg whites. You can then bake the batter in batches in your waffle iron to make waffles.
