Ingredients for 1 servings:

  • 1 cube of fresh yeast, approx. 42 g
  • ½ kg wholemeal spelt flour
  • ½ liter of mineral water
  • 2 tsp bread spice mix
  • 2 tsp salt
  • 1 tsp honey
  • 1 shot of fruit vinegar
  • ½ handful of sesame, sunflower seeds, pumpkin seeds
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 50 minutes

Dissolve the yeast in a little mineral water. Mix 3 large tablespoons of spelt flour with the dissolved yeast to form a very soft dough and let stand for 15 minutes. Meanwhile, mix all the remaining dry(!) ingredients together thoroughly. Now mix all ingredients with a wooden spoon or tablespoon to form a dough. Pour the finished dough into a greased loaf pan and sprinkle with sunflower seeds, pumpkin seeds, and linseed. Place the bread in a cold oven and bake at 200°C (top/bottom heat) for about 1 hour. Turn the almost-finished spelt bread out of the pan and bake for another 15 minutes with the oven turned off.
