Ingredients for 1 servings:
- 250 g butter, room temperature
- 1 egg(s)
- 3 tsp salt
- ½ tsp sugar
- 1 tbsp, heaped dried oregano, optional
- 150 g wholemeal spelt flour
- 120 g wheat flour type 405
- 200 g Gouda, grated
- some coarse sea salt for sprinkling

Spelt Cheese Biscuits
Put the room-temperature butter, egg, and all the spices in a bowl and mix everything thoroughly with a dough hook. Now add both types of flour and knead into a dough. Then add the Gouda and knead everything until you have a smooth dough. The dough will be very sticky, so use a dough scraper to transfer it to a sufficiently large piece of cling film and spread it out lengthwise. Now shape the dough bar into a rectangular (approx. 3.5 x 7 cm) bar in the film and place it in the refrigerator for at least 2 hours until it is firm to slice. Cut the dough into approx. 1 cm thick slices, place them in a grid pattern on a prepared baking sheet, leaving some space between them, and sprinkle with a little coarse sea salt. Bake in a preheated oven at 180°C (top/bottom heat) for approx. 50-60 minutes. Then separate the cookies along the seams and let them cool on a rack.
