Ingredients for 1 servings:

  • 180 g powdered sugar
  • 3 tbsp honey
  • 2 eggs
  • 1 tsp gingerbread spice
  • 300 g flour (spelt flour)
  • 1 tbsp baking soda
  • Egg(s), for brushing
  • Pine nuts and almonds, for decoration

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 25 minutes

Knead all ingredients thoroughly and let rest in the refrigerator, preferably overnight. Then roll out the dough to about 5 mm thick and cut out various shapes. Brush with beaten egg and decorate with pine nuts and almonds. Bake in the oven at 160-180 degrees Celsius with a bowl of water for 8-10 minutes. Tip: You can also roll out and bake the dough immediately after kneading, but the cookies will be fluffier and easier to roll out if they have rested.
